Dehydrated Fruits and Vegetables are Great Foods for Baja
Home made and store bought dehydrated fruits and vegetables are a great way to eat healthy produce without refrigeration.
If you do not have a refrigerator in your Baja vehicle, and you hate the idea of being without your fruits and veggies, then home made dehydrated snacks may be a solution for you.
This last Baja trip, I met some friends who were staying in Baja for a few months. They brought massive amounts of dehydrated veggies and fruits that were grown last summer in their garden in Oregon. Kale, tomatoes, peaches, and even slabs of home made salsa that they dried out into sheets of salsa strips. After days of eating soup and trail mix, my body was seriously craving some fruits and veggies. It was so satisfying to eat handfuls of veggies and fruits that still retained their vibrant flavors yet required no refrigeration.
If this sounds like something you are interested in, you will first need
to get a good dehydrator. A google search should reveal some good manufacturers.
Then just start making whatever you think would taste good while camping
in Baja. Once dehydrated, the food can store for months in a zip lock
bag or other container.
